Your holiday season starter kit has arrived…

OK two holiday recipes in a row, I guess it’s official, I’ve caved.

To be honest, I figure the only way I’m going to stay sane the next three months with darkness at 5pm and whatever we would like to call this snow mixed with rain every single morning is to swerve into the holiday spirit early. 

So on that note, whose ready for SUGAR COOKIE FUDGE with those hot chocolate bombs?

Sugar Cookie Protein Fudge

A delicious and protein rich fudge in holiday form! Simple, easy and quick to make a batch for bites between meals. No baking required and completely vegan friendly!

Passive 15 minutes
Total Time 20 minutes

Ingredients
  

  • ½ c Nut Butter
  • 60 g Botanica Health Vanilla Perfect Protein Powder
  • 3 tbsp Gluten Free Flour coconut or oat
  • 2 tbsp Coconut Oil melted
  • 1 tbsp Maple Syrup
  • Mini Chocolate Chips
  • Sprinkles

Instructions
 

  • Lightly spray an 8 x 8 baking pan.
  • In a mixing bowl, whisk together the flour and protein powder.
  • In a small bowl, mix together nut butter, coconut oil and maple syrup.
  • Mix the wet ingredients into the dry bowl.*
  • If desired add in chocolate chips and sprinkles.
  • Transfer mixed batter the to the pan and using your hands or a spatula press firmly until an even layer is formed.
  • Freeze for 10-15 minutes.
  • Cut into squares!

Notes

*If batter is too dry add 1-2 tbsp of DF Milk or water, if batter is too wet add 1-2 tbsp additional flour.
Store extras in fridge or freezer.

  3. In a small bowl, mix together nut butter and date syrup.
  4. Mix the wet ingredients into the large bowl.
  5. Add in milk slowly a little at a time, you may need more or less depending on the brand.
  6. Thoroughly mix and add in sprinkles.
  7. Transfer the to the pan and using your hands or a spatula press firmly until an even layer is formed.
  8. Freeze for 10-15 minutes.
  9. Cut into squares!
