No Bake Granola Protein Bars

OK throwback question… was your family team Kudos or team Chewy?

I was not thrilled back in the day but hindsight I have to give it to my parents for picking the healthiest packages option out there. 

Since I’m all about fulfilling childhood voids, in a healthy matter, I obviously had to do a leveled up remake.

No Bake Granola Bars

Who needs store-bought bars when you have homemade healthy granola bars? These no-bake bars are packed with fiber, organic ingredients and make for a great meal-prep snack. Easy, healthy and so delicious!

Ingredients
  

  • 1.5 c Rolled Oats
  • 1.5 c Backroads Granola Plant Based Original Mix
  • 60 G Protein Powder optional
  • 1/3 c Coconut oil
  • 1/2 c Honey
  • 1/2 c Nut butter or seed- gooey
  • 1/4 cup Chocolate chips melted (optional)
  • Sea Salt

Instructions
 

  • In a microwave safe bowl combine the coconut oil, honey, natural peanut butter and salt.
  • Cook for about 1 minute in 15 second increments, stirring continuously, or until coconut oil has melted.
In a large bowl mix the oats, granola and protein powder.
  • Mix melted liquid mixture in to the large bowl until everything is well combined and sticky.
  • Line a 9×13-inch baking pan with parchment paper or spray fully.
  • Add the mixture into the pan and distribute/pack down evenly with a spatula.
  • Place in the freezer for 30 minutes.
  • Once hardened, remove from freezer and drizzle with melted chocolate and sprinkle with sea salt.
  • Cut into bars!

Notes

These granola bars can be stored in an air-tight container in the freezer for up to a month. If stacking them, I recommend putting some parchment paper in between them to prevent them from sticking together.

It cannot get any more allergy/health friendly than that while loaded with flavor and crunch.
