Thanksgiving Protein Cookies

My normal thanksgiving plans pivoted from burning calories to gobbling cookies…

What are usually your Thanksgiving traditions? As in, not during 2020. 🙃

The last 15 years you could find me at the Turkey Trot.

The first few it was as my dad’s cheer squad, the bulk of those years as a runner myself, then a few at the end as the race coordinator.

Last year I was back in the Turkey Trot game as a runner again… which was pretty awesome, so at least I got at least one in before 2020. 

This year I will be racing in a different way… racing to finish the very last THANKSGIVING PROTEIN COOKIE before switching over to full on Christmas mode. 🎄

Thanksgiving Protein Cookies
Thanksgiving themed protein cookies made with just a handful of simple ingredients and all the festive fun! Gluten free, dairy free and kid friendly!

Instructions
  1. Preheat oven to 350°F.
  2. Lightly spray or line a baking sheet.
  3. Stir oats and protein powder together in a medium bowl
  4. Separately mix together the almond butter, banana and maple syrup.
  5. Hand knead the wet mixture into the dry mixture until dough forms.
  6. Once combined, forming the the dough into balls.
  7. Place balls on a parchment lined baking sheet, bake for 8-12 minutes until light golden.
  8. Remove from oven and press mini sunbutter cups into the centers of each cookie- note they will melt, do not touch after placing.
  9. Press 4-5 candy corns into the the top of each cookie as feathers.
  10. Once the center cups are cool decorate the turkey face with m&ms.
Recipe Notes

The consistency of the dough may vary based on the brand of protein powder and nut butter you use- make sure nut butter is drippy.

If the dough seems too dry, add more mashed banana or if you don’t mind dairy a splash of milk.

Store any leftovers in a covered airtight container on the counter/in the fridge for immediate consumption or store in the freezer for later.
