Raw Vegan Cinnamon Rolls

Ok ladies and gents, how would you like to be woken up on Valentine’s Day morning?

Cinnamon smells and coffee hit my mind first… and if we weren’t going to be out of state I’d probably toss both dog already walked too.

Any other fur moms out there feel me on this? Especially anyone with two XL like me. 🙃

Seriously though 364 days of the year I wake up to immediately start working so when I think special occasion I really don’t need much… juuuust morning coffee paired with a plate of these…

Raw Cinnamon Rolls
Raw, vegan cinnamon rolls! The most delicious date and nut crust rolled with a creamy cinnamon cashew filling, and topped with a sweet glaze and cinnamon. Truly all the best flavors. These no-bake cinnamon rolls are one of my favorites!

Instructions
  1. Food process nuts until fully broken down.
  2. Add dates, cinnamon and vanilla.
  3. If the mixture is too dry, add coconut oil.
  4. On a sprayed surface roll out into a rectangle.
  5. Place in freezer for 15 min.
  6. In the food processor or a blender combine all filling ingredients.
  7. Take out the base layer and spread evenly.
  8. On a sprayed surface or using plastic wrap carefully roll into a log.
  9. Cut into 1/2-1” wide rolls.
  10. Place back into the freezer for 30 min before devouring!
Recipe Notes

If desired drizzle over with a glaze! Glaze: 1/2 cup sugar replacement of choice + 1-2 tsp water
