I’m not a donut person but I do enjoy a munchkin (or five) so I’m calling these beauties a close enough second for celebrating…
Just without the baking, loaded with nut butter and sprinkled with coconut.

Ingredients
- ½ c Nut butter Butterfly Superfoods Pink Panther
- ¼ c Maple Syrup
- 1 tbsp Beet Powder
- 45 g Collagen Peptides or protein powder
- ½ c White chocolate chips
- 1/4 c Coconut unsweetened shredded

Instructions
- Whisk together nut butter and maple syrup to a mixing bowl.
- Mix in flour and collagen/protein powder.
- Spoon a tbsp size portion of dough into your hand and create ball using your palms.
- Place each ball individually on a cookie sheet or small tray.
- Place in the fridge for 10-15 minutes to harden.
- While the truffles are setting pour the chocolate chips into a microwavable bowl and set on medium heat for 2 minutes.
- Pour/drizzle melted chocolate over the truffles or dip the truffles directly into the bowl of melted chocolate. Sprinkle with coconut.
Recipe Notes
Leftovers should be kept refrigerated in a sealed container.
