Oatmeal Crumble Protein Bars

When one of your babies has surgery, stress baking is taken to a whole new level.

(OK stress no-baking technically.)

My little Neena had spay surgery this weekend. 🥺

On a normal day she is a ball of high energy and attention loving galore (like on top of me and Hawk 24×7) but since surgery it’s been a slow few days back to normalcy. 

It has been breaking my heart seeing her not 100%… hopeless and helpless mom guilt is at it’s climax. 

Thankfully, she is one tough cookie 🍪 so I know her recovery is only going to getting better from here! Everyday she is getting a little bit back to her playful self again. 

In the meantime, I’ve been taking out my emotional distress in the form of more seasonal no bake treats for you to try…

Oatmeal Crumble Bars
Not your grandmother’s oatmeal cookies- BETTER! High protein, highly satisfying crumble bars with your favorite oatmeal cookie taste. Layers of crumble, crunchy love with a creamy goodness in the middle.

Instructions
  1. Lightly spray an 8x8 baking dish,
  2. In a large mixing bowl, mix the sunbutter and syrup until well combined.
  3. Mix in the oats, almond flour and cinnamon until everything comes together.
  4. Let the batter sit for a few minutes to thicken.
  5. While the batter sits, prepare the filling y combining together yogurt and protein.
  6. Tightly press 2/3 of the crust in the bottom of the sprayed pan.
  7. Put the filling over the bottom layer and freeze for 15 minutes until thickened but not fully frozen.
  8. Take out and crumble the remaining 1/3 of the mixture over the filling.
  9. Lightly press down then freeze for 30 minutes longer or until firm.
