Confession: whenever I was babysitting a family who had them I would encourage the kids to break into a pack so I could snag one. 👀

Banana Chocolate Chip Mini Muffins
Who needs Little Bites when you have healthy homemade mini muffins stocked up in your fridge?! You definitely won’t after making a batch of these gluten free, easily vegan friendly and loaded with protein minis! Perfect for breakfast, snacks and on the go!

  1. Preheat oven to 350 degrees and spray a mini muffin tray.
  2. In a medium bowl, whisk together the mashed banana, peanut butter, egg, maple syrup and milk of choice.
  3. Throughly mix in flour, baking powder and salt until smooth.
  4. Fold in the protein bar.
  5. Evenly divide batter into muffin tray.
  6. Bake 8-12 minutes until toothpick comes out clean.
  7. Transfer muffins to wire rack to cool and enjoy!
