Now I love both… for the same reason I loved fruit salad growing up.

I won’t bore you with the array of reasons I don’t go near mayo… but what I have always gone near is yogurt… 🤟🏻
and the adult leveled up version of yogurt is QUARK, which makes the perfect thick and creamy texture for a BOSS #meatlessmonday sammy.
Now I just need someone to invite me to a picnic… ill bring egg salad sammies?! 🥪

Ingredients
- 2 Bread slices
- 1/2 Avocado
- 2 eggs hard-boiled
- 14 cup Quark Wunder Creamery
- 1 tsp Lemon Juice
- 1/2 tsp Black Pepper
- Spinach leaves
- Red Pepper flakes

Instructions
- Peel, dice and mash hard-boiled eggs in a small bowl.
- Mix in lemon juice, quark and black pepper to mashed eggs with a fork.
- Separately scoop out avocado into a small sized bowl.
- Mash the avocado with a fork, keeping some chunks.
- Grill or toast slices of bread. Layer spinach leaves on bottom slice.
- Top with mashed avocado then egg mix.
- Sprinkle on red pepper flakes.
- Place top slice on to make the closed sandwich.
- Serve immediately!
Recipe Notes
*To store egg salad mix- place it in a bowl with plastic wrap over the top or a very tight lid. It will last for up to 2 days. If desired add in avocado, but you may notice some browning on the surface with the avocado after 24 hours, the taste will be the same.
