Healthy Egg Salad Sammy
Ingredients
Instructions
  1. Peel, dice and mash hard-boiled eggs in a small bowl.
  2. Mix in lemon juice, quark and black pepper to mashed eggs with a fork.
  3. Separately scoop out avocado into a small sized bowl.
  4. Mash the avocado with a fork, keeping some chunks.
  5. Grill or toast slices of bread.
Layer spinach leaves on bottom slice.
  6. Top with mashed avocado then egg mix.
  7. Sprinkle on red pepper flakes.
  8. Place top slice on to make the closed sandwich.
  9. Serve immediately!

Recipe Notes

*To store egg salad mix- place it in a bowl with plastic wrap over the top or a very tight lid. It will last for up to 2 days. If desired add in avocado, but you may notice some browning on the surface with the avocado after 24 hours, the taste will be the same.
