They say a muffin is just a cupcake without frosting… and I don’t like frosting anyways sooo…🙃
Also the texture of these mini superfood chocolate chip bites of heaven are wildly fudgey, so I’m not sure if muffin is even the appropriate word?

Supergreens Mini Muffins
Healthy flourless protein filled muffins needing just four ingredients and quick, easy and delicious! Made with no butter, oil, grains or sugar- they are super fudgy and gooey on the inside, naturally naturally gluten free, vegan, paleo and dairy free!
Ingredients
- 1 c Banana mashed
- 1/2 c Nut or Seed Butter
- 1/4 c Oats Backroads Granola
- 1/4 c Supergreens or Matcha
- 60 G Protein Powder or Collagen
- 1/2 c Chocolate Chips mini
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line or spray a mini muffin tin.
- In a high speed blender grind down the oats into flour.
- Add the rest of the ingredients except for the chocolate chips and blend until smooth.
- Fold in chocolate chips.
- Pour mixture into each muffin tin, filling until just full.
- Bake for 12-15 minutes, or until a skewer/toothpick comes out just clean.
Notes
Store extras refrigerated in a sealed container for up to 5 days.
