Majorly disappointing on Sunday when we came home to nothing stored up in my refrigerator full of answers but let me tell you, that extra energy in bite form was wildly convenient last week- and the surprise was a hit soooo… worth it.

Maple Pecan Energy Bites
Ingredients
- 1 cup Oats rolled
- 1/2 c Pecans chopped/raw
- 1/2 c Walnuts chopped/raw
- 1/2 c Nut butter or Tahini
- 1/4 c Maple Syrup
- 2 tbsp Bare Organics Coconut Palm Sugar
- 2 tsp Sea Salt
- 1 tbsp Water
Instructions
- Place all ingredients in the bowl of a food processor.
- Pulse blend until all ingredients break down.
- If mixture is too dry or crumbly, add one tbsp of water.
- Line a baking sheet with parchment paper.
- Scoop tbsp sized servings of the mixture and roll it into balls.
- Chill for at least an hour.
