Have you tried putting 2020 in rice yet? I finally did ~10 days ago.✌🏻
I spent all summer in overdrive trying to “make up” for the set backs and loss that happened during the start of Covid to only find myself drowning with still not feeling like I was doing “enough.”
Even though I’m constantly told I’m doing too much, I’m too busy and I have too much on my plate (my appetite disagrees).
So after hitting the bottom of the marinara jar, mentally and emotionally…🍅
I decided to get super SAUCEY with the universe, call it quits and put 2020 in RICE..d veggies.🍚
My airfryer wanted in on the 2020 reboot too.

In all honesty though, normal daily jokes aside- this year has sucked the life out of most of us in several ways.
Jobs lost, relationships ending, moves, illness, abnormal everything etc.
Just be kind and remember every single person is fighting battles you know nothing of, some that go much further than they’ll ever let you in on. ❤️

- 2 oz Plantbased ground or ground meat
- 2 1/4 cups Riced veggies
- 2 tbsp Marinara Organico Bello
- 1/2 cup Shredded Cheese dairy free or non
- 1 large Egg whisked
- 1/4 cup almond flour
Ingredients

- Cook the ground in a medium skillet over medium-high heat, breaking it up with spoon as it cooks as small as you can.
- Add the riced veggies and marinara.
- Cook on medium heat, stirring until the veggies are tender.
- Remove from heat and add the cheese to the skillet and stir well to mix.
- Let it cool 3 to 4 minutes, until it’s easy to handle.
- Using 1/4 cup sized portions, scoop out the mixture and roll into balls.
- Set aside.
- Place the egg in one bowl and the flour in another.
- Add the parmesan to the crumbs and mix.
- Dip each ball in the egg, then in the flour.
- Transfer to a baking sheet or piece of foil.
- If baking in the oven, bake 425F 20 ish minutes, until golden.
- If using an airfryer, bake 400F for 8-10 minutes turning halfway until golden.
- Serve with marinara sauce, for dipping!
