Veggie Arancini Balls

  1. Cook the ground in a medium skillet over medium-high heat, breaking it up with spoon as it cooks as small as you can.
  2. Add the riced veggies and marinara.
  3. Cook on medium heat, stirring until the veggies are tender.
  4. Remove from heat and add the cheese to the skillet and stir well to mix.
  5. Let it cool 3 to 4 minutes, until it’s easy to handle.
  6. Using 1/4 cup sized portions, scoop out the mixture and roll into balls.
  7. Set aside.
  8. Place the egg in one bowl and the flour in another.
  9. Add the parmesan to the crumbs and mix.
  10. Dip each ball in the egg, then in the flour.
  11. Transfer to a baking sheet or piece of foil.
  12. If baking in the oven, bake 425F 20 ish minutes, until golden.
  13. If using an airfryer, bake 400F for 8-10 minutes turning halfway until golden.
  14. Serve with marinara sauce, for dipping!
