Apparently I left my common sense in March, so much for being “older and wiser”?
I was just reaaaally excited when we had that week of 80 degrees.
Reality check hit though, there are endless seasonal gems this time of year as a but cold nights and damp leather seats are not two of them.
Strawberries on the other hand… big seasonal gem, especially when you’re low on freezer treats.

Ingredients
- 6 large Dates pitted
- 3/4 c Granola or mixed nuts
- 2 tbsp Honey
- 1/4 c Strawberries chopped
- 1/3 c c Cashew butter melted or gooey
- 1/4 c Coconut Oil melted and split in two parts
- 80 g Strawberry Shortcake Protein Powder BioHealth Nutrition

Instructions
- Line a 5×7 loaf pan with parchment paper.
- Pulse blend pitted dates and granola together using a food processor then add in half of the melted coconut oil.
- Transfer mixture to loaf pan and pack down using a spatula.
- Pulse blend strawberries until a puree is formed.
- Add in a large mixing bowl with honey, cashew butter and second half of the coconut oil.
- Mix together while folding in protein powder- judge needing more or less based on texture, ideally it should be a thick dough texture.
- Spread mixture to pan on top of crust and freezer for at least an hour before cutting!

Store leftovers in the freezer in an airtight container!
