- 2 c almond flour
- 3/4 tsp Baking Soda
- 1/2 tsp Baking Powder
- 2 large eggs
- 3/4 c butternut squash cooked/mashed
- 1/4 c Veggie Mix Puree or carrot puree
- 1/3 c Wunder Creamery Quark plain
- 1 c Riced veggies grated zucchini and riced broccoli
- 1/3 c Chocolate Chips
Ingredients

- Preheat oven to 350F.
- Lightly spray a loaf pan.
- In a large mixing bowl, whisk together all dry ingredients except chocolate chips.
- In a medium mixing bowl, mix together eggs, squash, riced veggies and quark until thoroughly combined.
- Gently fold the wet ingredients into the dry ingredients together until just combined.
- Fold in chocolate chips.
- Bake until golden brown and a toothpick inserted into the center of the bread comes out clean, about 45 minutes.
- Remove from oven and cool for about 10 min before removing from pan.
If substituting out a veggie puree mix for carrots it will not be 7 veggies in total!
For the riced veggies I grated 1 medium zucchini and added 1/4 cup riced broccoli.
