Sneaky Veggie Bread
The best way to sneak in all those vitamins and minerals to your diet! Who can deny health in a soft, moist, thick bread form? Not to mention free of oils, gluten and grains! Immune health here we come!

  1. Preheat oven to 350F.
  2. Lightly spray a loaf pan.
  3. In a large mixing bowl, whisk together all dry ingredients except chocolate chips.
  4. In a medium mixing bowl, mix together eggs, squash, riced veggies and quark until thoroughly combined.
  5. Gently fold the wet ingredients into the dry ingredients together until just combined.
  6. Fold in chocolate chips.
  7. Bake until golden brown and a toothpick inserted into the center of the bread comes out clean, about 45 minutes.
  8. Remove from oven and cool for about 10 min before removing from pan.
Recipe Notes

If substituting out a veggie puree mix for carrots it will not be 7 veggies in total!  

For the riced veggies I grated 1 medium zucchini and added 1/4 cup riced broccoli.
