I eat pure pumpkin ~350 days of the year… so I almost didn’t feel the need to do a special TOAST,
but I couldn’t pass up a reason to open another can.
Especially since my can opener has been MIA from the move,
so I’ve been going full MacGyver with my chefs knives to open them… and it makes me feel really cool. 😂
Now, you might be thinking that you already celebrated enough… but I promise you haven’t hit your pumpkin peak just yet.
You will once you devour skinny stuffed French toast filled with all things Fall and pumpkin.

Skinny, crunchy and stuffed with pumpkin to start any Fall morning with a perfect seasonal taste.

- Stuffing:
- 1/4 cup Greek Yogurt
- 2-3 tbsp Pumpkin Puree
- 1/2 tbsp Maple Syrup
- 1/2 tsp Pumpkin Pie Spice
- Toast:
- 4 slices Bread gluten free whole grain
- 2 large Eggs
- 2 tbsp Oat Milk
- 1/4 cup Pecans blended into flour
- TOPPING:
- 2 tbsp Flour pecan or of choice
- 2 tbsp Oats
- 1 tbsp Oat Milk
- 1 tsp Cinnamon Powder
Ingredients

- Mix yogurt, pumpkin puree, maple syrup and pumpkin pie spice together in a small bowl.
- Spread pumpkin mixture on slices of bread.
- Make two sandwiches and thickly press the edges to seal each sandwich.
- Whisk the eggs and milk together in a shallow bowl.
- Spread pecan flour on a plate.
- In a small bowl mix together the ingredients for the French toast topping.
- Dip each sandwich first into the egg mixture and then into the pecan flour.
- Cook sandwiches stovetop in a lightly sprayed pan.
- Just before removing from pan, sprinkle topping mixture on sandwiches.
- Remove from stove top to cool and devour!
