Stuffing:

Greek Yogurt

Pumpkin Puree

Maple Syrup

Pumpkin Pie Spice
Toast:
4
slices
Bread
gluten free whole grain

large Eggs

Oat Milk

Pecans
blended into flour
TOPPING:

Flour
pecan or of choice

Instructions
Mix yogurt, pumpkin puree, maple syrup and pumpkin pie spice together in a small bowl.
Spread pumpkin mixture on slices of bread.
Make two sandwiches and thickly press the edges to seal each sandwich.
Whisk the eggs and milk together in a shallow bowl.
Spread pecan flour on a plate.
In a small bowl mix together the ingredients for the French toast topping.
Dip each sandwich first into the egg mixture and then into the pecan flour.
Cook sandwiches stovetop in a lightly sprayed pan.
Just before removing from pan, sprinkle topping mixture on sandwiches.
Remove from stove top to cool and devour!
