Ingredients
- 1 cup Pecans
- 1/3 cup Coconut Flakes unsweetened
- 1 tbsp Honey
- 1 tbsp Lemon Juice
- 1 tbsp Sugar Free Sweetner Silver Fern Kakoto
- 1 cup Strawberries
- 1/2 cup yogurt Greek or full fat
- 1 serving Collagen optional

Instructions
- Spray a cupcake/muffin tin with non-stick cooking spray.
- In a blender or processor combine the pecans, coconut, honey and lemon juice until fully combined and at a desired crust texture.
- Press the pecan mixture into each individual cup of the tin.
- Separately blend strawberries until texture is smooth.
- Pour the blend into a small bowl and fold in the yogurt.
- Mix in sweetner and collagen (optional).
- Fold until it is fully combined.
- Top strawberry mixture on the pecan crust in tins.
- Place tin in the freezer for 30 minutes to an hour.
- Once they are frozen, serve and enjoy!
