Three things I am not ok with…
🧡 the sun setting in the middle of the day (even though I do love that its bright out at 6am).
🧡 that it will soon no longer be socially acceptable to stuff everything with pumpkin
🧡 how quickly I am going to go through these RAW PUMPKIN COOKIE BARS ….

It does not get any more perfect than a HEALTHY cookie bar stuffed with PUMPKIN and covered in CHOCOLATE…

Ingredients
- Bottom Layer : Crust
- 4 oz Granola of choice
- 2 oz Mixed nuts
- 2 oz Oats
- 1/3 c Coconut Oil
- Pumpkin Layer:
- 1/2 cup Butter My Cookie Almond Butter American Dream Nut Butter
- 1/4 c Pure Pumpkin
- 1/4 c Maple Syrup
- Chocolate Layer:
- 1/2 cup Chocolate Chips
- 1 tbsp Coconut Oil
- Sea Salt

Instructions
- Lightly spray a 9x5 baking pan.
- In a food processor, pulse granola, nuts, oats and coconut oil until a thick, coarse texture forms. Transfer to the pan and create an even layer.
- In a small bowl mix together ingredients for middle layer.
- Spread pumpkin mixture on top of crust layer.
- Place in freezer.
- In a microwave safe bowl, combine chocolate and coconut oil.
- Melt until well mixed and warm- watch carefully to be sure not to burn.
- Once cooled, pour over the pumpkin layer, top with sea salt.
- Place in the freezer for 30 minutes to harden.
