When I think bonfires I think cozy, and cozy season is Fall but for some odd reason y’all hype up bonfires S’MORE in summer.
Where do you stand?
ARE BONFIRES A SUMMER THING OR FALL THING?
Either way, please don’t attempt to argue with me on this one: S’MORES are a BREAKFAST thing.
🧇 Now I love breakfast foods a WAFFLE lot, like all day long a lot, but this is next level ridiculous.
And I bet (as most people do based on first glance) you’re thinking there’s no way she made this healthy…
✔️Gluten Free Ingredients
✔️High Protein Waffles
✔️Refined Sugar Free Overall
OK minus the mini marshmallows, but I had to leave those in for you all.
Now tell me again why so many of you hype up S’MORES more in the summer than fall?
I’ll let you sit on that one while I dig into my waffle stack layered with S’mores protein peanut butter and a drizzle of pure maple syrup… 🤤

- Waffles:
- 6 large Eggs
- 2 cups Cottage cheese
- 2 cups Old fashioned oats or substitute 1-1.5 cups pancake mix
- 1/2 tsp Vanilla Extract
- Filling/Toppings:
- Fokken Nut’s Your Killin Me S’Mores Peanutbutter
- Mini Marshmallows
- Maple Syrup
- Graham crackers
Ingredients

- Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
- Combine eggs, cottage cheese, oats and vanilla in blender until smooth.
- Pour the mixture into the waffle iron, close gently and cook until golden brown.
- Take out the waffles.
- Carefully and quickly spread peanut butter on one waffle, add a few mini marshmallows then place the next waffle on top.
- Repeat until all waffles are used.
- Drizzle on top with syrup and crushed graham crackers.
- Serve immediately!
