Ingredients
Waffles:
6
large Eggs
2
cups
Cottage cheese
2
cups
Old fashioned oats
or substitute 1-1.5 cups pancake mix
1/2
tsp
Vanilla Extract
Filling/Toppings:

Mini Marshmallows
Maple Syrup
Graham crackers
Instructions
Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
Combine eggs, cottage cheese, oats and vanilla in blender until smooth.
Pour the mixture into the waffle iron, close gently and cook until golden brown.
Take out the waffles.
Carefully and quickly spread peanut butter on one waffle, add a few mini marshmallows then place the next waffle on top.
Repeat until all waffles are used.
Drizzle on top with syrup and crushed graham crackers.
Serve immediately!
