Now choosing my single favorite squash is a no brainer-
ZUCCHINI RUNS THE WORLD.
Last summer my dad grew GIANT ones and it was the most epic WEEK of my life…
Week because that’s how quickly I went through a handful of them that were as wide as pumpkins. 😂

WHAT VEGGIES ARE YOU AIR FRYING LATELY?!

Ingredients
- 1 large Zucchini
- 1/2 cup almond flour Natures Eats
- 1 large Egg whisked
- 1/2 tsp Sea Salt
- 1/2 tsp Black Pepper
- 1/4 tsp Garlic Powder
- 1/4 cup Shredded Cheese optional
- Red Pepper flakes

Instructions
- Preheat an air fryer to 350 degrees F.
- Slice zucchini into pieces about 1/4” wide. In a small bowl combine flour, spices and cheese.
- In a separate bowl place whisked egg.
- Dip one zucchini slice at a time into egg then into flour mixture, pressing to coat.
- Place each slice on a slightly sprayed piece of foil.
- Place as many zucchini slices in the air fryer basket as you can without overlapping them. Cook each side for 5-6 minutes.
- Pour your favorite sauce or marinara to dip in!
Recipe Notes
You can also use nutritional yeast in place of cheese!
