Midwest friends, who went BANANAS at the beach with 75 degrees yesterday?!
OK I didn’t go that far, but I was tempted.
Instead I have been fully embracing everything outdoors as much as possible… without a jacket… in November: mindblowning.
I am not monkey around here, it has been truly a gift from Mother Nature to still be able to support outdoor dining.
We all are just hoping it’s here to stay longer than these CHUNKY MONKEY PROTEIN CUPS will be staying in my freezer…🥜

Ingredients
- 1/4 cup Cacao Butter Chips
- 1/2 cup White Chocolate dairy free or regular
- 1/3 cup Creamy nut or sun butter
- 30 g BioHealth PB Cookie Protein Powder 1 serving
- 2 tbsp Oat Milk or coconut
- 1/2 Banana sliced
- Walnuts crushed

Instructions
- Use silicone liners or lightly spray a muffin tin.
- In a small bowl melt together cacao and white chocolate.
- Fill each of the cups 1/3 of the way with melted cacao butter.
- In a small bowl combine nut butter, protein powder and milk.
- Once gooey and well mixed place one heaping tbsp of mix into the middle of each cup on top of cacao base.
- Add 2-3 thinly sliced pieces of banana next.
- Top each cup with remaining cacao butter.
- Sprinkle over with crushed walnuts.
- Place in freezer for 20-30 minutes or until set!
Recipe Notes
Do not leave them out too long before devouring- they will start to melt once at room temperature!
