There is no more iconic of a couple than chocolate and peanut butter in my house! Making chocolate peanut butter cookie dough cups the perfect way to kick off Valentine’s Day month. It’s a healthy, homemade and high-protein treat filled with the best flavors! No baking required.

Ingredients
- 1/2 c almond flour
- 1/3 c Powdered Peanut butter *substitute option in notes
- 1/3 c Protein Powder or collagen
- 3 tbsp Maple Syrup
- Filling
- 1 large Protein bar
- CHOCOLATE COATING:
- 3/4 c Chocolate Chips or chopped chocolate bark
- 1 tsp Coconut Oil
- Sea Salt

Instructions
- Lightly spray a muffin tin or use liners.
- In a large bowl, combine almond flour, peanut butter powder, protein powder and maple syrup.
- Mixture should be smooth, but still thick.
- Transfer into cups and press down lightly.
- Place pieces of protein bar in the center of each cup, firmly press down.
- Place pan in freezer for about 5 min to harden.
- Melt chopped chocolate or chocolate chips and coconut oil in a microwave safe bowl and microwave at 30 second intervals, stirring – for about 1 minute – until completely melted.
- Allow to cool to room temperature for 2-3 min.
- Take out tray from freezer and fill each cup with chocolate mixture.
- Sprinkle on sea salt.
- Place in freezer for 5 minutes to harden!

Store in the fridge for up to one week in an airtight container!
