Chocolate Chip Banana Zucchini Bread

Since I proclaimed a more green theme this week in honor of Mother Earth…🍌#zucchinibread

Plus I needed a reason to use up the last of those brown bananas… 

So that I can buy more green bananas… 

To wait for them to get brown again… 

It’s a vicious cycle but I’m not mad about it,

especially when my mouth is full of this thick, creamy and moist as ever loaf.

Chocolate Chip Banana Zucchini Bread
You are going to love this Chocolate Chip Banana Zucchini loaf! It is made without any flour, oil or refined sugar- fully vegan friendly if coconut yogurt is used too! The flavor and texture make for a perfectly moist slice any time of day!

Instructions
  1. Preheat oven to 350ºF and prepare a loaf pan with parchment paper liners or spray with nonstick cooking spray.
  2. Blend together all dry ingredients until well mixed.
  3. Add egg, yogurt and honey until the mixture is smooth.
  4. Pour the batter into a large bowl and stir in the bananas, zucchini and chocolate chips.
  5. Fill the loaf pan.
  6. Bake for about 40 minutes or until toothpick test is clean.
  7. Allow to cool before cutting!

  9. Store bread in the fridge in a sealed container!
Recipe Notes

**To drain the liquid from the zucchini, place about a cup of it between two paper towels, cheesecloth or in a clean dish towel and squeeze it over the sink.
