So that I can buy more green bananas…
To wait for them to get brown again…
It’s a vicious cycle but I’m not mad about it,
especially when my mouth is full of this thick, creamy and moist as ever loaf.

- 1.5 c Oats rolled
- 1 tsp cinnamon ground
- 1 1/4 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 3 tbsp Cashew butter American Dream Nut Butter
- 1/2 c Coconut yogurt
- 1/4 c Honey
- 1 c Banana mashed
- 1 c Zucchini shredded drained and packed**
- 1/3 c Chocolate Chips
Ingredients

- Preheat oven to 350ºF and prepare a loaf pan with parchment paper liners or spray with nonstick cooking spray.
- Blend together all dry ingredients until well mixed.
- Add egg, yogurt and honey until the mixture is smooth.
- Pour the batter into a large bowl and stir in the bananas, zucchini and chocolate chips.
- Fill the loaf pan.
- Bake for about 40 minutes or until toothpick test is clean.
- Allow to cool before cutting!

- Store bread in the fridge in a sealed container!
**To drain the liquid from the zucchini, place about a cup of it between two paper towels, cheesecloth or in a clean dish towel and squeeze it over the sink.
