What better way to continue with this European brunch affair than to only using Wunder Creamery QUARK for the batter but filling crepes with QUARK too? ✌🏻
No better way.
OK so maybe this isn’t as super patriotic as it looks.. but believe me, the taste is FIREWORKS. 🇺🇸

Ingredients
- 1/2 cup Quark or Greek Yogurt
- 2 large Eggs whisked
- 1/2 cup almond flour
- 1/4 tsp Baking Powder

Instructions
- Combine all ingredients into a blender.
- Pulse blend on high speed for 30-60 seconds.
- Transfer the batter into a bowl.
- Heat a lightly oiled or sprayed pan over medium/high heat.
- Scoop the batter onto the pan, then tip and rotate the pan to spread batter as thinly as possible.
- Cook on both sides about 1-2 minutes on each.
- Once slightly cooled (but still warm) spread on Quark (or Greek Yogurt) down the center of each crepe.
- Roll up and top with your favorites!
