Wellness weekend getaway destination is looking like southern WI- super close, convenient and dog friendly.
Goal: to NOT make an excel spreadsheet, which is driving me NUTS. 🥜

So in a NUT shell making an excel itinerary is even more APPEALING than usual,
but again the idea is a wellness getaway,
an opportuNUTy to destress for 48 hours,
aka not to go BANANAS on plans. 🍌
Monday Mantra: I WALNUT give in to my cravings to excel… instead i will devour BANANA NUT MUFFINS. 😉

Ingredients
- 1/2 c Banana ripe and mashed
- 1/4 c Coconut Oil
- 1 Egg
- 2 tbsp Maple Syrup
- 1/2 tsp Pure Vanilla
- 1 c Walnut flour Natures Eats
- 1/4 c Cacao Chips or Chocolate Chips
- 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/4 tsp Salt

Instructions
- Preheat oven to 350F and line a muffin tin with liners and nonstick spray.
- In a large bowl, whisk all wet ingredients until well combined.
- In a separate bowl, whisk together dry ingredients.
- Add dry ingredients to the wet ingredients bowl.
- Stir until combined.
- Pour into muffin tin and bake for about 20 minutes or until toothpick inserted comes out clean.
- If desired top with glaze and chocolate chips!
- Enjoy!
