As much as we’re killing it in Alaska with fresh fish and wine galore I’m absolutely ready to throw my heart back into a batch of no bake treats loaded with all the plant based benefits of DesignerProtein filled inside.
Oatmeal Cookie Cheesecake Bars
Not your grandmother’s oatmeal cookies- BETTER! High protein, highly satisfying crumble bars with your favorite oatmeal cookie taste. Layers of crumble, crunchy love with a creamy goodness in the middle.
Ingredients
- 1 c Nut butter
- 1/2 c Date Syrup or maple syrup or honey
- 2 c Rolled Oats
- 1/4 c Flour gluten free
- 1 tsp Cinnamon
- 1 c Yogurt of choice
- 60 g Designer Protein Plant Protein Vanilla
Instructions
- Lightly spray an 8×8 baking dish,
- In a large mixing bowl, mix the nut butter and syrup until well combined.
- Mix in the oats, flour and cinnamon until everything comes together.
- Let the batter sit for a few minutes to thicken.
- While the batter sits, prepare the filling by combining together yogurt and protein.
- Tightly press 2/3 of the crust in the bottom of the sprayed pan.
- Put the filling over the bottom layer and freeze for 15 minutes until thickened but not fully frozen.
- Take out and crumble the remaining 1/3 of the mixture over the filling.
- Lightly press down then freeze for 30 minutes longer or until firm.
