Heading into fall with so much joy… August was the toughest month of 2021 for me, but one big win made up for it…
I AM FULLY HA (hypothalamic amenorrhea) RECOVERED.
SO MUCH JOY OVER HERE. Many more details to come later this month on the process but I had to bring light to one of the biggest wins of not just this summer but this year by a landslide.
I’m just so happy that after 7 years of not having a cycle and one year of making a heavy amount of lifestyle changes it was all 1000000% worth it.
Especially full on FOOD FREEDOM to eat what I want, when I want and how much I want. AKA devouring as many ALMOND JOY OATMEAL BARS as I want to on World Coconut Day today.

Almond Joy Oatmeal Bars
Ingredients
- Base:
- ¼ c Coconut oil melted
- ¼ c Maple syrup pure
- ¼ c Cashew butter** creamy
- 1 c Coconut shredded and unsweetened
- 1 c Oats rolled or old fashion
- 45 G Designer Protein French Vanilla Whey Powder
- Coating:
- 1/4 c Chocolate melted
- Coconut shredded and unsweetened
Instructions
- In a large bowl whisk together coconut oil, maple syrup, cashew butter and salt until smooth.
- Stir in shredded coconut, whey and oats until thoroughly combined.
- Spray a 9 x 5 inch loaf pan.
- Add the base mixture to the pan.
- Using a spatula, press until mixture down until condensed.
- In a small bowl whisk together chocolate topping ingredients.
- Pour chocolate topping over base and sprinkle with extra coconut!
- Freeze bars for at least 1 hour!
