Dole® Pineapple Mango Marinated Chicken

Don’t come at me but when I get asked whether I prefer corn tortillas or flour tortillas I usually say neither…

It’s partly the gluten in flour (not my stomach’s favorite) and partly not being big on corn in general.

Dole’s Pineapple Mango Juice is perfect for any sipping occasion, but especially perfect for marinating chicken overnight to be used for loaded taco bowls!

The marinade is crazy delicious and so simple: Dole’s Pineapple Mango juice, taco sauce, and zesty spices. 

I let the chicken marinate overnight in a Ziplock bag to make for an effortless process. You could let it marinade for two days if you want even more pineapple mango flavor!

The first step was cutting chicken breasts into cube pieces, which could easily be cut into slices or diced into smaller pieces but think of surface area coverage when it comes down to the marinating process!

The taco sauce is what gives the marinade an extra kick, but if you’re looking to keep it on the smoother side with less heat, feel free to skip out on the taco sauce and stick with the remaining ingredients!

After letting the chicken soak overnight, the cooking process was perfectly simple in the air fryer, 12-15 minutes tossing the pieces around, but this can also be easily done on the stove top with a little olive oil in a skillet. 

I added the cooked chicken pieces to a big bowl loaded with my favorite taco flavors! It made for the perfect dinner! So perfect that I ended up making it again the next day.

I’ve officially added this pineapple mango chicken to the home cooking menu until further notice – I am totally addicted to all the flavor!

Pineapple Mango Marinated Chicken

Marinade that is crazy delicious and crazy simple! Dole’s 100% Pineapple Mango Juice makes a star appearance to provide the perfect amount of flavor in combination with taco sauce and spices! All in all perfect for marinating chicken overnight to be used for loaded taco bowls!

Ingredients
  

  • 2 Dole® Pineapple Mango Juice cans
  • ¼ c Taco sauce
  • 8 oz Chicken Breast
  • 1 tsp Chili Powder
  • 2 tsp Garlic Powder
  • 2 tsp Black Pepper

Instructions
 

  • Using a sharpened knife and a wood cutting board, cube, slice or dice the chicken breast into pieces for the marinade.
  • Place chicken breast pieces in a ziplock bag (or a sealed container will work too).
  • Be sure to immediately place used knife and cutting board in the sink or dishwasher (if dishwasher safe) to prevent salmonella.
  • In a small bowl whisk together Dole’s Pineapple Mango juice and taco sauce until well combined.
  • Add in spices and continue to whisk.
  • Pour small bowl mixture (marinade) over chicken pieces.
  • Fully zip the bag or seal the container.
  • Allow to marinate overnight (or longer) in the refrigerator.
  • The next day, remove chicken from marinade to cook.
  • Cook in Air fryer at 350F for 12 to 15 minutes or cook stove top by placing in a warmed and lightly oiled or greased skillet.
  • Brush with additional marinade sauce before removing if desired.

Notes

Add chicken to your favorite meals or create a loaded taco bowl as I did by adding in your favorite taco toppings and kale or lettuce!
