Beet Root Hummus

One last blast of pink before we go full on spring mode…

Plus I’m still cleaning out the pantry for the next big move in less than 30 days (welp) so we are using up those chickpeas for good purpose.

Vegan friendly, raw, organic, paleo and you don’t even have to have real beets to make- but if you have them feel free to toss some in too (I just may have)!

Thick, creamy and the best to spread onto or into just about every single meal.

 

Non-negotiables that you definitely need: BareOrganics beet root powder, chickpeas, olive oil, lemon juice and tahini.

Garlic is also a non-negoitable in this house but I’ll forgive you if you skip out on it.

Beet Root Powder Hummus

This beet powder hummus is a bright, healthy, and good-for-you snack! Hummus made with simple organic ingredients to make for a vegan friendly, paleo, healthy snack that you can feel good about devouring!

Ingredients
  

  • 2 tbsp BareOrganics Beet Root Powder
  • 2 c Chickpeas drained and rinsed
  • 2 Garlic cloves optional
  • 1/4 cup Tahini
  • 1/4 c Lemon juice
  • 2 tbsp Olive Oil

Instructions
 

  • Add all ingredients to a food processor.
  • Pulse blend on low speed, and slowly increase it until all ingredients are well mixed.
  • Serve with olive oil, seeds and spices of choice!

Notes

Beet Root (Beta vulgaris) has been historically cultivated for its culinary and medicinal properties. Beetroot became more widely consumed when chefs in 19th century France discovered its culinary potential. Betalains are the phytonutrients that give the root its vibrant red pigment that can also be used as a natural dye.
