Pumpkin Pie Protein Bites
You can’t have fall without deliciously healthy, simple, no bake pumpkin recipes! These cheesecake bites are completely vegan friendly, gluten free and have an added protein kick!

- Crust:
- 1/2 c Dates pitted
- 1/3 c Cashew butter
- 3 ⁄4 c Granola or Nuts
- Cheesecake:
- 6-7 oz CoCo Goods Lite Coconut Milk half can
- 2 tbsp Maple Syrup
- 1 ⁄4 c Coconut oil room temp
- 1 c Pumpkin puree
- 60 G Protein Powder
- 1 tsp Cinnamon powder
Line an 8-inch (20 cm) square baking dish with parchment paper.
Add the dates, cashew butter and granola to a food processor and pulse until crumbly.
Transfer the crust to the prepared baking dish and spread in an even layer.
Freeze while you prepare the rest of the recipe.
Blend together the cheesecake ingredients until a thick and smooth texture if formed.
Pour over granola crust.
Freeze for at least 2 hours, or overnight.
Remove from freezer and slice into bites, squares or bars.
