No Bake S’mores Cookie Bars
Zero campfire- or oven- needed! No Bake S’mores Bars that require healthy ingredients and are ready in about 30 minutes! High protein, highly satisfying and great for a simple delicious cookie bar! Vegan friendly and gluten free friendly recipe.

- Crust
- 1/2 c Almond Flour
- 1/4 c Crackers sweet things or graham
- 1/4 c Kays Naturals Original Pretzels gluten free
- 1/4 c Nut butter gooey
- 1/4 c Coconut oil melted
- 2 tbsp Date syrup or maple or honey
- Topping
- 2 c Mini Marshmallows melted, dairy free or regular fluff
- Chocolate Chips mini
- Peanuts optional
Line an 8×8 pan with parchment paper.
In a food processor, add crackers, flour and pretzels.
Once the ingredients are broken down mix in the syrup, nut butter and coconut oil until mixture becomes sticky.
Transfer mixture to pan as cookie base, pack down firmly.
Add melted down mini marshmallows or fluff onto base layer.
Sprinkle over with chocolate chips and peanuts- firmly press down into marshmallow layer.
Place pan in freezer for about 20 minutes until firm!
Use large sharp knife to cut bars into squares.
Bars should be stored in fridge or freezer.
