No-Bake Samoa Granola Cookies

No bake girl scout cookies made with simple pantry ingredients and a whole lot of crunch! Samoa cookie flavor but so much easier and healthier!

Ingredients
  

  • Toppings:
  • Chocolate melted
  • Caramel sauce
  • Coconut unsweetened shredded
  • Cookies:
  • 1/2 c Nut butter gooey
  • 1/4 c Coconut Oil melted
  • 30 g Protein powder** caramel
  • 1/2 c Oats rolled or quick
  • 1/2 c Grandy Oats Coconola original flavor
  • 1/4 c Coconut unsweetened shredded

Instructions
 

  • Mix together warm melted coconut oil with nut butter in a medium bowl.
  • Whisk in protein powder and coconut.
  • Lastly mix in oats and coconola- if batter is too thick add 1-2 tbsp plant based milk.
  • Scoop 2-3 tbsp of batter onto a wax-paper lined cookie sheet one as at one.
  • Drizzle over with chocolate and caramel.
  • Sprinkle with extra coconut.
  • Let set in the fridge or freezer for 15 minutes or until solidified.

Notes

Store in the fridge for up to 1 week or in the freezer for up to 3 months.
**Protein powder is optional, a great substitute is also sugar free butterscotch pudding mix.
