No bake Blueberry Cheesecake Cups

Nothing beats capping off summer treats than with healthier cheesecake cups! Loaded with simple pantry ingredients and a whole lot of blueberry flavor! Easily vegan, no baking required and high protein!

Ingredients
  

  • CRUST
  • 1/2 c Oats
  • 2 tbsp Maple Syrup or date
  • 1/3 c AmericanDream How You Brewin’ Almond butter
  • FILLING
  • 1 c Yogurt dairy free or regular
  • 60 G Protein Powder Vanilla
  • 1/3 c Blueberries frozen or fresh both work
  • TOPPING
  • 1 c White Chocolate Chips melted

Instructions
 

  • Lightly spray or line a muffin tin.
  • Pulse blend together all ingredients for the crust.
  • Transfer mixture into muffin tin cups.
  • Blend or mix together all filling ingredients.
  • Spread filling mixture on top of crust.
  • Spoon or drizzle melted white chocolate as top layer.
  • Freeze until hardened.

Notes

Store extras in the freezer.
