Mini Apple Pie Cups

The perfect fall bite has arrived! A chewy hazelnut crust, sweet creamy filling and topped with chunks of apple! Completely vegan friendly, gluten free and no baking required!

Ingredients
  

  • Crust
  • 3/4 cup Walnuts
  • 1/2 c Gooey Snacks Hazel Cocoa Spread
  • 1/2 c Dates pitted
  • 2 tsp Water
  • Filling
  • 1/4 c Coconut Cream full fat
  • 2 tbsp Maple Syrup or honey
  • Apple Chunks fresh or dried

Instructions
 

  • Lightly spray or line a mini muffin container.
  • In a processor, finely grind the walnuts and dates together.
  • Add the water starting with 1 teaspoon.
  • The mixture should be moist but still hold together when pressed. Press into 14-16 mini silicone muffin cups (about 1 tablespoon crust each).
  • Whisk all filling ingredients together in a bowl until smooth.
  • Pour into the crusts.
  • Place into the freezer for at least one hour until cup filling firms.

Notes

Store in a sealed container in the freezer.
