Chocolate Chip Zucchini Oatmeal Bars

These Chocolate Chip Zucchini Banana Breakfast Bars are a healthy way to curb your sweet tooth AND get some greens in. They’re fluffy, vegan & gluten-free! Also, filled with Alkaline solution to balance pH for a healthy gut and immune support!

Ingredients
  

  • 1 c Flour gluten free nut or oat
  • 1/4 c Oats rolled
  • 1/4 c Collagen or Protein Powder optional
  • 1/2 c Zucchini grated
  • 1/4 c Milk plant based
  • 1/4 c Banana mashed
  • 2 tbsp Ameo Life Alkaline Solution
  • 1/4 c Chocolate Chips dairy free

Instructions
 

  • Lightly grease a glass dish that will fit in your air fryer, approx 6x4 inches with cooking spray or oil.
  • In a large bowl, whisk together dry ingredients.
  • In a separate bowl or food processor, add zucchini, milk, applesauce, and alkaline solution until combined.
  • Pour wet ingredients into the dry ingredients and fold in the chocolate chips.
  • Pour batter into the baking pan.
  • Bake in the air fryer on 350F for 30-40 minutes until a toothpick inserted in the center comes out clean.
  • Let cool in the pan before slicing into bars.

Notes

Store in an airtight container in the refrigerator for up to 5 days.
*You can also bake these in the oven! Double the batch for a 9x9 baking dish.
