Those who had holiday time off: you survived the return.
The rest of us who never stopped working, hopefully all your emails from the last two weeks finally got answered… I’m definitely still waiting on a few.
Either way I think we all deserve pizza… everyone in agreement? I can’t see how there would be any disagreement when it’s filled with ZUCCHINI and AIR FRYER FRIENDLY!

Ingredients
- 1 medium Zucchini grated
- 1.5 c almond flour
- 1 Egg beaten (use flax-seed egg replacement, if vegan)
- 1/4 c Cheese optional
- 1 tsp Italian seasoning
- Toppings of choice

Instructions
- Squeeze out as much liquid as possible from the zucchini.
- In a bowl combine grated zucchini, flour, beaten egg, cheese and seasonings.
- Form small dough like balls.
- Slightly flatten and spread out in the air fryer.
- Bake at 325 F for 10-15 min flipping half way.
- Top with your favorites!
