Lemon Coconut Mini Macaroons

All things citrus and coconut are talking over my life this spring and I’m not mad about it…

I also finally learned the appropriate spelling for ‘macaroons’ versus ‘macaron’ this season.

Watch out adult spelling bees I’m coming for you, assuming those are a thing? I have no idea.

What I do know is mini macaroons means it is fully acceptable to devour an entire plate of LEMON COCONUT MINI MACAROONS!

Lemon Coconut Mini Macaroons
Mini macaroons are so fitting for spring! The flavors of lemon and coconut form together to make a bite of goodness that fills you with internal sunshine!

Instructions
  1. Line a baking sheet with parchment paper or silicone baking mats and preheat the oven to 350°F.
  2. Whisk all the dry ingredients in a medium bowl together.
  3. In a small bowl, mix together wet ingredients until smooth.
  4. Pour the wet ingredients into the dry ingredients- mix until combined into dough.
  5. Using a measuring tbsp, scoop the dough into balls and arrange them 2 inches apart on the prepared baking sheet.
  6. Bake the cookies for 5-8 min, or until the sides and bottoms have turned slightly golden.
  7. Allow to cool before enjoying!
