Coffee, caffeine and cake.. three things that just sound like Sunday right?

Seriously I am so thrown off with everything ..
WHO ELSE GREW UP ON WEEKEND COFFEE CAKE?!
I think the brand was Entenmann’s .. a special treat in my house. I probably didn’t get it then but I am super thankful now as an adult that I was loaded with wholesaled foods, nutrients and clean eating habits as a kid- but still not deprived of weekend specialties like Coffee Cake.
Now that’s probably the last specialty I’d ever go for.. so much sugar, no actual coffee, ample “bad fats” and an array of artificial ingredients… ok you get it, straight to your hips.
This combination takes only a few minutes, filled with Purity Organic Arabica Coffee beans and is actually super good for your body!
The gorgeous cinnamon swirl is obviously a bonus, which I adore… I coat my life in cinnamon.

Ingredients
- 1/3 cup Coconut Flour
- 1 scoop Vanilla Protein Powder
- 1/2 tsp Baking Soda
- 1 tsp Ground cinnamon
- 1 large Egg whisked
- 1/4 cup Unsweetened applesauce
- 1-2 tbsp Purity Organic Coffee

Instructions
- First brew up a 6-8oz cup of Purity Coffee.
- In a small bowl whisk together the dry ingredients.
- Mix in the whisked egg and applesauce.
- Lastly add in the coffee, mixed everything well until a thick batter is formed.
- Spray a microwavable mug with cooking spray and add the mixture in.
- Microwave for about 2 minutes.
- Allow to cool then add all your favorite toppings! I mixed 1-2 tbsp of Coconut Oil with Peanut Butter powder and cinnamon as a glaze. 🙂

You can enjoy this coffee cake straight out of the mug for easy cleanup. One mug and that’s literally it!
