Salads will forever be one of my mid day staples.
I LOVE a loaded salad, and I LOVE to make it seasonal.
Seasonal Salad Options:
🍃 Make it Green: Brussel Sprouts, Kale, Spinach
🍠 Make it Squashy: Acorn, Butternut, Delicata, Pumpkin
🍎 Make it Fruity: Apples, Pears, Grapes, Pomegranate, Figs
How to DRESS it up without the dressing?
Choose an option that is HIGH protein, LOW sugar and FULL of probiotics… WunderCreamy Quark for the win.
Shake it up, sprinkle on herbs and spice.. then face PLANT in. 😜

Ingredients
- 2-3 cups Spinach or Kale
- 1/2 cup plain Quark Wunder Creamery
- 1/2 cup Chickpeas drained and rinsed
- 1/3 cup butternut squash cubed
- 1/3 cup Apple slices
- ¼ cup Pecans
- ¼ cup Cranberries
- 1 tbsp Lemon Pepper

Instructions
- In a large bowl, stir together the greens, apple, chickpeas and squash. In a small bowl whisk together quark and spices.
- Pour the quark mixture over the salad bowl.
- Cover with lid and shake well.
- Top with pecans and cranberries.
- Cover and refrigerate at least 10-15 minutes for the flavors to marry.
- Serve chilled with additional ingredients if desired!
