Peanut Butter Banana Bread Muffins

Ingredients
  

  • 2 ripe Bananas mashed
  • ¼ c BareOrganics Coconut sugar
  • 1/2 c Greek Yogurt
  • 1 large Egg
  • 1/2 c Oat milk
  • 1/2 c Peanut butter creamy
  • 2 tsp Vanilla
  • 1 ¾ c Oat flour
  • 1 tsp Cinnamon ground
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/4 tsp Salt

Instructions
 

  • Preheat oven to 425°F degrees and prep a muffin pan.
  • In a medium bowl, mix the bananas, yogurt, egg, milk, peanut butter and vanilla until smooth.
  • Separately whisk together the flour, sugar, cinnamon, baking soda, baking powder, salt.
  • Gently stir the wet ingredients into the dry ingredients until combined.
  • Evenly distribute the batter into the muffin cups.
  • Bake for 5 minutes then reduce the oven temperature to 350°F and continue to bake for another 12 minutes or until a toothpick inserted in the center comes out clean.
