Pecan Pie in a Mug
In the Thanksgiving mood for good old-fashioned pecan pie, but you’re looking to save ample time? Break out a mug! Time has nothing on this extremely quick, paleo and gluten free mug pie!

  1. In a bowl, mix together the crust ingredients.
  2. Roll the dough into a ball. If it does not hold together, add more water, 1/2 tablespoon at a time.
  3. Divide the dough ball into two smaller balls.
  4. Wrap each in plastic wrap and refrigerate while preparing filing.
  5. Whisk together the eggs, syrup and coconut oil for the filling.
  6. Add in sugar and blended down pecans.
  7. Take out dough balls and form the crust inside two mugs along the sides and bottom.
  8. Microwave for 5 minutes.
  9. Inside the formed crust border, fill each mug with the pie filling.
  10. Microwave for 5-8 minutes (checking every few minutes. Filling should not be overly “soupy.”
  11. Serve with toppings if desired!
