Mini Strawberry Cheesecakes
The easiest clean eating friendly mini strawberry cheesecakes with a healthy cookie crumble crust! Lightened up with greek yogurt and no refined sugar!

  1. Lightly spray a muffin pan; set aside.
  2. In a bowl mix together flour and almond butter until dense crust-like texture is formed.
  3. Scoop about one tablespoon each into 9 cups, pressing with back of tablespoon to flatten.
  4. In a medium bowl mix together yogurt, maple syrup and vanilla until smooth.
  5. Evenly distribute batter on top of crusts
  6. Top with 2-3 tbsp of strawberry puree.
  7. Pop into the freezer to thicken for 30-45 minutes.
