  1. Preheat the oven to 325F and spray a baking sheet.
  2. In a large bowl, stir together the oats, coconut and nuts.
  3. In a medium bowl, whisk together the cacao, coconut oil, vanilla and maple syrup until smooth.
  4. Pour the cacao mixture over the oat mixture in the large bowl.
  5. Stir until all the oats are coated.
  6. Distribute the mixture evenly into the baking sheet.
  7. Bake for 20-30 minutes, stirring often to ensure no burnt pieces.
  8. Allow the granola to cool completely in the pan without stirring.
  9. Once it’s cooled completely, add in the mini chocolate chips. Store extras in an airtight container!
