Apple Cinnamon French Toast Cups are all of the goodness of French toast packed in small cups to easily toss back! Each cup filled with sweet apples, creamy quark and crunchy topping.
Preheat the oven to 350F and lightly spray a muffin pan. Cut the bread in small ½ inch cubes.
In a bowl whisk together eggs, milk, vanilla, and spices.
Mix in bread cubes to bowl.
Set aside for 15 minutes to soak, stirring occasionally.
To make the filling stir together all ingredients in a small bowl.
Fill each muffin tin cup almost to the top of the pan with the bread mixture, then gently press with the back of the spoon to make the dent in the center.
Bake for 3-5 minutes.
Carefully remove from the oven and spoon in the apple filling to each cup.
Bake for about 15 more minutes or until the edges have set and the tops are golden brown.
Top with granola if desired.
